This really is a treat ! Cauliflower florets meet chillies, beans, lemon and all things good – that includes the delicious rich tasting dressing !
1 medium sized cauliflower – cut the florets out, and steam until tender (but don’t overcook)
2 spring onions, chopped
2 cloves garlic, chopped
2 Tbsp fresh flat-leaf parsley, chopped
1 tsp dried mint
1 cup pre-cooked cannellini beans
salt to taste
1 red chilli, chopped
Place all the ingredients in a shallow serving dish, mix with your hands so as not to disrupt their form too much, then clean your hands and make the dressing – you do have the option of making the dressing first in readiness.
½ cup (125 ml) extra virgin olive oil
the juice of 1 large lemon or 2 small ones
1 tsp agave syrup or maple syrup
¼ tsp Spice Maniac mix for extra edge & flavour, or ¼ tsp chilli powder
Place in a jar with lid tightly sealed, then shake well and pour straight onto the salad – Serve and Enjoy !
